Een van my 5-minute gunstelinge is sommer net knoffel, rooirissie en pietersielie. \u2019n Minuut of wat in \u2019n warm pan met goeie olyfolie en hy\u2019s klaar. Hy slaan jou katswink met sy geur. En d\u00eds die geheim van \u2019n goeie pastasous \u2013 minder sous, parmantige geur. Nog \u2019n gunsteling is tamatiesous. So eenvoudig, maar doen jy dit reg, sing jy opera. Dit sukkel half om ordentlike geur uit die gemiddelde tamatie te tower. My geheim? Meng met die origanum, knoffel, \u00bct sout en 3E olyfolie. Gooi op \u2019n bakplaat en bak teen 140\u00b0C vir 40 minute.<\/p>\n<p class=\"p1\">Braai intussen die uie in bietjie olyfolie tot sag. Sodra hulle sag is, voeg die tamatiepasta by en braai vir \u2019n minuut of twee (dit raak van daai onaangename skerpheid van tamatiepasta ontslae). Sodra die tamaties gekook is, gooi hulle en die uie in \u2019n voedselverwerker en blits tot dit \u2019n puree is. Sit nou die lot in \u2018n fyn sif en werk dit deur met \u2018n lepel. Wonderlike fluweelsagte tamatiesous kom onder uit en die pitte en skille bly in die sif agter. Sit die tamatiesous terug op die hitte en roer die mascarpone-kaas by. As die sous effe te dik na jou smaak is, voeg bietjie van die vloeistof waarin jy jou pasta gekook het by. Net voor jy opdien, voeg die asyn by, \u2018n skootjie swart peper, proe vir sout en jy\u2019s reg. As jy will uithang, probeer Anthonij Rupert se Terra Del Capo Sangiovese.
