Summer in Cape Town is always about a month behind the rest of the country, but at long last it’s here and I can pop on a cheery summery frock. The way I eat is definitely very seasonally influenced. In warmer weather I want lighter, brighter, fresher food and salads are top of the list. When they are a main meal and not a side, I absolutely have to include protein to keep me going.

The inspiration for this chicken salad is Tashas Chicken Crunch Salad. Tashas at the Waterfront is one of my favourite restaurants to pop into for a light girlie lunch following a spot of retail therapy. I invariably order this salad. It has smoky notes thanks to tahini and loads of lemony freshness. So I decided to recreate it, my way.

A glass of Sauvignon Blanc is a perfect match for the lemony notes of this unusual chicken salad. Scroll down for my pick from the lovely region of Tulbagh.

All you need is…

FOR THE TAHINI YOGHURT
175g tub of double cream plain yoghurt
1 tsp tahini
third of a teaspoon salt
zest of one lemon, grated as finely as possible (tip: use a Microplane)
1 tsp lemon juice
FOR THE DRESSING

1 Tbsp extra virgin olive oil
1 Tbsp vegetable oil
quarter teaspoon sesame oil
1 tsp runny honey
quarter teaspoon salt
3 Tbsp lemon juice
quarter teaspoon freshly ground black pepper
FOR THE CHICKEN SALAD
1 whole mealie/corn on the cob (or half a cup frozen)
handful of thin green beans
6 radishes
1 large spring onion
quarter cup flaked almonds
3 cups finely shredded white cabbage
1-2 large skinless free range chicken breasts
1 Tbsp butter and 1 Tbsp vegetable oil, for frying
salt and pepper, for seasoning
wedges of lemon, to serve

Start by making the dressings. For the tahini yoghurt, simply stir together all the listed ingredients and place in the fridge to keep cold. For the dressing, add all the dressing ingredients together in a bottle with a screw top and shake it vigorously. (I find old jam jars ideal for making dressings.)

If you are using a whole mealie, boil it for about ten minutes. Let it cool slightly and then use a sharp knife to cut off the kernels. (I like zapping it with my blowtorch briefly before I do so because I like the extra depth of smoky flavour it lends. If you do not have a blow torch but have a gas hob, use tongs to hold the mealie over the open flames for a few seconds, it has the same effect.) If you are using frozen mealies, a few minutes in boiling water is all they need.

Next blanche the green beans very briefly in a saucepan with boiling water – you want them really al dente so about a minute should do the trick. Place them in a colander, run them under a cold tap for a few seconds and then immediately dunk them into an ice bath – just cold water with loads of ice blocks. This sets the lovely bright green colour.

Slice the radishes and place them in the ice water as well, it makes them super crunchy. Slice the spring onions into very thin strips about 5cm long and they too go into the ice water. Just a few minutes in the cold water and they will start curling beautifully. (This is not strictly necessary as it doesn’t change the taste – it’s just for the pretty!) Pop the almonds into a clean non-stick pan and toast over medium-low heat, shaking frequently, until they are lightly browned.

Time to make the chicken. Chicken breast can be beastly dry. One of my tricks is to flatten them so they cook very fast over very high heat. Simply slice the breast in half lengthways and use a rolling pin to bash the pieces lightly to flatten them some more. Season the chicken lightly with salt and pepper. Heat a large non-stick frying pan with 1 Tbsp vegetable oil and add the chicken along with the butter. (You could leave the butter out but the chicken cooks fast and will look anaemic. Butter helps it to brown.) Fry on both sides until the chicken is just cooked through.

To plate up, dollop the tahini yoghurt in the middle of a large plate and use the back of a spoon to spread it to the sides. Toss the cabbage with the lemony dressing. Plate up with the rest of the salad ingredients and add the chicken. Top with toasted almonds, garnish with lemon wedges and tuck in!

Discover tahini

Tahini or tahina is made from toasted ground sesame seeds. It is earthy with a slightly bitter undertone and is fabulously versatile in both savoury and sweet dishes.

Experiment a bit!

Add it to chickpeas with some salt, lemon and garlic and you have hummus. Add it to a salad dressing with red wine vinegar, oil, a pinch of salt and honey and you have a delightfully different vinaigrette. It is on pricy side but you use very little at a time and it lasts in the fridge for a very long time. So invest in a bottle, it’s well worth it.

The Tulbagh wine region doesn’t immediately come to mind when one thinks wine, yet this region has much to offer – from palate-pleasing, pocket-friendly quaffers to award-winning stunners. Theuniskraal’s Sauvignon Blanc is a lovely mid-priced white to enjoy with this unusual chicken salad.

On the nose it has asparagus with tropical fruit and a hint of grass. Take a sip and you’ll discover an elegant, crisp wine with ripe fruit on the fore palate backed by asparagus, gooseberries and a hint of grassiness.
